Yes, you can have ice-cream for breakfast, I feed it to my kids every other morning. Thanks to my good friend April turning me on to the Vita Mix blender. You can use any frozen fruit for this recipe.
*2 cups frozen fruit
*1/2 cup yogurt of choice (I use the non-dairy coconut yogurt)
First dump all ingredients into the blender.
Then blend until it is smooth.
Blend all ingredients on high until smooth and creamy. I use the Vita Mix blender, let me know how your blender does on this recipe. You can always add a little almond milk and a banana to make a smoothie if the ice cream is too hard to make. When all is said and done my kids each get a portion of ice cream that is only 10 - 15 carbs a serving! You may wonder why am I so in to carb counting, well my daughter was diagnosed with type 1 diabetes this last Christmas and carbs have to be covered with insulin shots so, yeah I count them and re-count them and count them some more all throughout the day.
You can make ahead some cut up frozen fruit in freezer bags. I like to carb count my portions then write it on the bag in a sharpie marker. The more prep you do the less time everything takes.
