Apple Sandwich

You can make a nutritious sandwich without bread.  It is so simple, all you need is an apple and some nut butter, I used almond butter!
Cut the apple into 1/4 inch thick slices, no need to peel them.  Depending on the size of the apple you should end up with at least 8 slices.
Add some nut butter to one slice and top that with another slice of equal size.
MMMMMM, looks good.

Have a bite.
The kids love them!  You can also experiment with other fruits in season.  Bananas, pears, anything that makes a firm slice would work!  All of you out there who are counting carbs, well this is so low on the carb scale.  If you had a whole apples worth with 2 tablespoons of almond butter you are looking at about 20g of carbs, not bad.

Experiment with different nut butters.  Here is a recipe for the Cashew Cream.

1 1/2 cups raw cashews
1/4 cup honey
1 tablespoon lemon juice
2 teaspoons vanilla extract
add a little water as needed for the right consistency.

blend ingredients together in a high power blender.  The whole recipe is going to have 116g of carbs. So about 7g per tablespoon.
