Kale Salad

Yes this stuff is good for you but did you know it tastes good too?  All you have to do is put on some oils and lots and lots of garlic powder.  You are going to want to plant some kale next year after you taste this salad.  My 8 year old acctually beggs for this salad.......what!  This recipe comes from my dear friend Carol, thanks Carol for passing this along to us. 


This is my kale in the summer garden.

Blue Ridge Kale

Russian Kale

Gather you ingredients:
     * a bunch of Kale (I prefer the Blue Ridge Kale for this salad, but I am showing both types of kale in the instructions)
     * 3 Tablespoons of olive oil (or more according to your taste)
     * 2 Tablespoons of Garlic powder (or more)
     * a bunch chives all chopped up
     * juice from one lemon
   Optional ingredients
     *chopped walnuts or almonds
     *chopped bell peppers
     *manderin oranges
     *shredded carrots
     *random veggies from your refrigerator.

First you have to prepare your kale.  You are going to rip the leaf off the hard middle stem. 



Make a nice pile and chop, chop, chop until you have fine bite sized pieces.


Discard the stems.
I am using both types of kale for this salad

Chop up your other ingredients into bite sized pieces and add this to the kale in a large salad bowl.

Add your olive oil, lemon juice, and garlic powder then toss, toss, toss until it is combine well. 

This salad does very well made fresh or made the day before and stored in the refrigerator.  Get creative with it, add something sweet and sour.  It is virtually carb-free.

 I bought some bell peppers from COSTCO and I have no idea what I have here now..... It looks like some hot peppers, and some jalapeno???.  So much for bell peppers!


My butternut squash is growing!

The apples are getting bigger!
The grapes are getting more mature, but the birds are getting to them.


Here is a trick I use to protect the grapes as they grow on the vine.
Simply put a plastic fruit container over the maturing grapes.  The air holes prevent the container from getting too hot and the clear plastic helps the sun get in to help the grapes mature.  Harvest time is easy, snip off the vine and the grapes are ready to give away or store in their container!

BeEs IN THe GArDeN

Whenever I enter my garden there is a faint hummmmm, it almost sounds electrical.  Then as I grow closer to the sunflowers the HUMMMMMMMM is so loud I almost duck my head.  The Bees are having a good old time with the sunflowers.  I must have quite a few wild colonies around here.  It makes me think that I need to raise some bees next year.....

StrawbOcado Pudding

Yes I have named this pudding Stawbocado to indicate that there are strawberries and avocados in it.  The avocado strikes again!  My kids were jamming down Avocado Fudge Pops today and I thought, wow what if we change it up a bit and lower the carbohydrates?????  Well here we go for you non-chocolate lovers (I am not fond of chocolate) 



INGREDIENTS:
1 avocado
2 cups strawberries with the tops cut off
2 Tablespoon honey
1 Tablespoon non-dairy milk of choice

Add all your ingredients to the blender and process on high until it is creamy.  Add 1 Tablespoon more milk if you want the pudding less thick or if you are making frozen pudding pops out of this recipe. 



THIS IS SUPER EASY, and it tastes remarkably good!  The total carbs run around 60g for the whole recipe depending on the milk you use.  I made 8 Popsicles and each one came out to be 7g of carbs.  This is truly a snack made in heaven for you diabetics out there.

To make StrabOcado Pudding Pops simply empty your blender contents into a zip-lock bag and cut a hole in one of the sides so you can easily and non-messily fill your Popsicle mold. 

This makes the best summer treat. It has plenty of nutrients and your kids (or you)  can have two or even THREE!  Add some chunks of strawberries in your pops for extra fun.

Strawberry Syrup

Because of our gluten free, low carb lifestyle I am always on the search for new recipes that aren't too sugary or carby.  I invented this strawberry syrup for some waffles we made the other day. 


INGREDIENTS:
a handful of fresh or frozen strawberries
and honey

INSTRUCTIONS: 
blend the strawberries and one tablespoon of honey on high in your blender.
If you are using frozen strawberries you must defrost them first. 
Use the honey according to your taste or add stevia for a SUPER LOW CARB syrup. 

It looks and tastes WONDERFUL,
and it is good for you.




You could do this with any fruit, try it and let me know how it turns out.  I am going to try peaches next!

Summer Garden Goodness

I love being in the garden during the summer.  There is so much happening here, take a look....


Berry picking, or shall I say grazing.
