Gluten-Free Banana N' Oat muffin

This oat flour is my new obsession.  I have been cooking/baking gluten-free for about a year now.  I have come up with some really great recipes, and some total flops that ended up in the compost heap.  I am very impressed with the lightness and gluteny type rise this oat flour gives me.  IT LOOKS AND TASTES LIKE GLUTEN FLOUR, you even get the little air bubbles in the bread during the baking process.  Yes I know oats are a debatable gluten-free flour, but you can get certified gluten-free oats and grind the flour yourself in a blender. 

*2 cups oat four
*1/2 cup brown rice flour
*1 teaspoon baking soda
*1 teaspoon baking powder
*1/2 teaspoon nutmeg
*1/2 teaspoon cinnamon

Sift all your dry ingredients together and set this aside

*2 eggs room temperature
*1/4 cup oil (I used coconut oil)
*1/4 cup honey
*3 ripe bananas
*2 teaspoons vanilla extract

Blend all the wet ingredients together on high until it looks creamy.
Then add the dry ingredients while mixing on low. 

*1/2 cup raisins (optional)

This recipe makes about 18 muffins.  Bake on *350 for about 17 minutes or until the muffins are slightly brown.  Have fun with this recipe, add some nuts or dried fruit. 

The carb count for these individual muffins comes to 20g each.....with a total carb count at 360g.  Not too bad for my type 1 diabetic daughter!


Gluten-Free POP TARTS

This has been an instant success, it all began with a post my sister-in-law did on her blog.  To see it CLICK HERE.  She did a great job, and my mouth started to water.  My two youngest kids have never experienced Pop Tarts, so here they are. 
The steps are fairly simple, you will need to start with some pie crust.  You can use the pie crust I have here by Gluten Free Mama CLICK HERE! to visit my post on that. 
1. roll out your pastry dough between two sheets of waxed or parchment paper. 
2. add 1 tablespoon of your jelly (I used organic strawberry) spaced out 2 inches on the dough. 
3. Add your top layer of rolled out dough and section off your individual pop tart shapes.  Cut your sections apart and place them on some parchment paper on a cookie sheet (use a spatula to move these tender morsels.)

 Now you simply crimp the edges around each pop tart with a fork.  Make sure you seal all the way around so the jelly doesn't bake out. 
And there you go, sweet strawberry goodness.  These work out to about 30g of carbs each with the jelly inside.  My type 1 diabetic daughter LOVES THESE THINGS, she gets all this for one unit of insulin......
 OOOOHHHHHH,  don't you want to make some of these now that you see the gooey middle?

Gluten-Free Apple Pie

So my family thinks that this is the best pie they have had in the whole entire year that we have been gluten-free.  As they sat eating it after dinner they kept remarking about how it tasted so "real" I took that as a compliment, but also started wondering why I was spending so much time on this everyday "fake" food they keep eating.  All kidding aside I know you are going TO LOVE this pie. 
10 tart apples
1/2 cup brown sugar
2 tablespoons gluten free flour
dash of salt

I have a great recommendation for the pie crust (that is why the pie tastes so good) there is a pie crust mix out there by Gluten Free mama you NEED to try.  to see my post on the pie crust CLICK HERE!
Slice up all your apples discarding the core and skins.  Toss all ingredients into a bowl, fully coat the apples.  Add all the ingredients into the bottom pie shell, and cover with the top crust, crimp the edges and slash the top for ventilation. 

 Look at that beauty, this is what REAL gluten-free pie looks like folks!

Gluten-Free Mama's PIE CRUST

This was the most amazing gluten-free product I have tried so far.  It not only replaces the traditional pie crust, but makes it an exceptional pie!  I have only tried it with the apple pie, but I know it would make a great pumpkin pie, or cherry pie also!  I even made POP TARTS.  I thought I was such an awesome mom when my youngest was asking me "what is a Pop Tart mom."  It makes me feel better that my kids are getting more nutrition than I did when I was younger.  Click on the links at the end of this post to see the apple pie and Pop Tarts if you want to know how I did that! 
 The directions and ingredients are SIMPLE, thank GOD.  It is nice to have something easy once in a while.  You will need some Spectrum butter flavor shortening, 1 egg white (or 2 TBSP honey) and cold water. 
 If you have ever made pie crust from scratch before this will be just like that.  Add all the ingredients to the bowl.  Cut the shortening up into the flour with a pastry cutter.  Keep mashing until there are little pebble size pieces. 
You are going to have to roll this dough out between waxed or parchment paper to keep it from sticking to the rolling pin.  This saves a lot of time, and helps with the next step when you put the flat dough in the pie pan. 
 As you can see the dough comes together well (after a slight misjudgment on the flop into the pan.)  Make sure you oil the pan with some shortening to prevent it from sticking, you want your pie to have a bottom crust when you serve it!  The top of the pie is much easier to put on, you could even do a lattice top, this dough is very forgiving, and it tastes like "REAL PIE."  My family was remarking over and over about how this tasted like "real apple pie" I kept wondering what they thought of all the other "fake" food I had been serving them over the years. 



Dairy-Free CHOCOLATE BANANA pudding/ice creme

My good friend April brought me this recipe a while ago.  I have been making it a after dinner, and once with guests over I realized how good this recipe really is.  Someone asked if I put vanilla ice cream in this recipe, I had to assure them that it was just frozen bananas.  They quizzed me some more, and then I had to make it again in front of them (they probably just wanted seconds.)
You can make this ice cream or pudding depending how much milk you put into the mixture.  Make this recipe with chocolate or carob depending on your taste.

First you have to freeze some bananas. You only need two bananas for this recipe, but if you want seconds you had better get some more frozen NOW.  A quick tip, freeze the bananas without the skins on them, please peel them first!

You don't have to use an ice creme maker!
*2 frozen bananas
*1 tablespoon cocoa, or carob powder
*20 drops chocolate liquid stevia
*1/4 cup non-dairy milk of choice + 2 tablespoons more depending on consistency

I use a combination of one or all three of these stevia flavors. You can get by with just using the chocolate, but the vanilla and toffee add such a great flavor.  My combination is 10 drops chocolate, 5 drops toffee, and 5 drops vanilla creme 

1. fill you VitaMix with two frozen bananas (broken up into smaller pieces), and of the other ingredients.
2. Blend on HIGH for about 30 seconds to a minute, or until the mixture is creamy.

GINGER TEA - For Your Cold/Flu

I came upon this information in a few library books and then did some research on the Internet.  This tea is supposed to boost your immune system, help you get over your cold/flu faster, and helps to inhibit vomiting!  Make some tea, give it a try, at this point what do you have to loose?

 First here is some information on our good friend "the ginger root."

Slice the ginger root into thin slices. Bring the water to a boil in a saucepan. Once it is boiling, add the ginger. Cover it and reduce to a simmer for 15-20 minutes. Strain the tea.

Add honey and lemon to taste.
Note: Keep in mind that if you are making ginger tea as a home remedy during cold and flu season, sweeteners are not recommended.
Get tough on your cold/flu with TEA! I pity the fool that doesn't use this TEA!



This is a SUPER EASY, inexpensive, expressive art project for the doll lover.  My daughters love playing dolls, trouble is there is never enough beds for all their dolls.  So we came up with this inexpensive way to house them all.

1 cardboard box (the size of the doll you want the bed for)
paint/decorative materials

 Cut the flaps off the box, save one of the shortest flaps for the next step.
Use the short flap to make a head/foot board design.  Simply fold the flap in half and make half of the design.  Cut your design out while the flap is folded so you get a nice mirror image, and both sides are even.
 Use your head/foot board design you just cut out to trace over each skinny end of the box.  Then cut out each side.

 You can cut the long sides of the box as ornate or deep/shallow as you wish.  Make sure you keep some of the lower sides on so the bedding doesn't slip out.
 HAVE FUN, and paint your bed any color, use glitter, glue on lace, make cute designs with stencils. 


Sugar-Free Lemon ICE

Yes I know it isn't summertime, it is cold outside.  Sometimes you just want a bit of summer in the middle of winter.  I make this for my kids all year round.  It is a great pick-me-up drink/snack.  Get your vitamin C here, come and get it kids/adults/humans.

A little secret to make this go even faster..........freeze your fresh squeezed lemon juice in an ice cube tray, then drop two cubes in with the rest of the ice for this recipe.

2-3 tablespoons fresh lemon juice
2 cups of ice
1 dropper full of liquid lemon stevia (or plain stevia, lemon gives it more flavor)

BLEND and serve.  You notice I am using a VitaMix, you will have to make this in small batches if your blender doesn't handle ice chipping well.
