Ode to Gi Gi

This is Addison's special stuffed kitty, named Gi Gi.  Gi Gi has been around for three years.  It all started Christmas 2009. 

Christmas 2010 we tried to replace Gi Gi, or at least create a back-up model. 
As you can see the toy starts out white.............
This is the exact same kitty a year apart.

But "Fluffy Gi Gi" was not allowed into the inner circle of Addison's special toys.  It was down right rejected.  The very thought of replacing Gi Gi was an affront. 

Why would we want to replace this cute, lovable, special toy?  Well...............we spend most of our time looking for it, trying to clean it, and generally keeping track of it when we travel. 

Notice, Gi Gi has lost her crown.

This little stuffed animal could be called the head of our household.  It controls the sleep patterns of the four year old, calms her mood, and can always be counted on to provide comfort.  And everyone knows if the four year old is happy.............everyone is happy. 

This is my Ode to Gi Gi

In the very beginning it was just a toy.

It was there to provide some laughter and joy.

As time went on, a bond was formed

The day it happened......I was never informed

Crying for Gi Gi in the middle of the night

Where is Gi Gi, get out your flashlight

A nice grey brown where white used to be

A rough matted coat is all I can see

Glass eyes that are cloudy and worn

Washings and stitchings where it has been torn

A constant companion

A little ones friend

It's lost and it's found

Will it ever end?


Low Carb Gluten-Free CHOCOLATE Donuts

 In the diabetic world there is a continuous search for a low carb sweet snack/dessert that doesn't have a lot of FAKE ingredients, and SUGAR.  Well I stumbled upon this one.  I follow a blog that did about the same thing CLICK HERE to visit the SPUNKY COCONUT.   You will need a specialty donut pan, but can make these into muffins.  I found some great techniques that make the donut making process a little easier, and less messy. 

1/4 cup cocoa powder
1/2 cup almond or coconut milk
1 cup almond butter
3 tablespoons grapeseed oil
1/4 cup tapioca flour
1/4 cup flax flour
1 dropper vanilla creme liquid stevia
1 tsp vanilla extract
1 tsp guar gum
1 tsp baking powder
1.5 tsp baking soda
1/2 cup honey

Few things are more precarious than a young "helper" in the kitchen.  The job that always gets done by my helper is cleaning the mixer blade!  There won't be a speck of chocolate left on that piece of equipment. 
A precarious ride.
Throw everything into the mixer and blend until there are no more lumps. 
Fill your donut mold HALF FULL.
 I used a pastry bag without a tip to evenly fill the donut mold.  USE EXTRA GREASE so your donuts POP OUT.

Bake your donuts for 6 minutes at 350*.  You can make muffins with this recipe, bake them for about 14 minutes.

They are beautiful, top them with frosting and sprinkles if desired.
I got 18 donuts = 5g each
you can get 14 muffins = 7g each

A DIABETIC DONUT anyone can love!

Gluten-Free NO MARSHMELLOW Chocolate Rice Crispy Treat

The girls and I made this about an hour ago.  These treats come together very fast, only 20 minutes from start to finish.  Finding the ingredients took a good five minutes.  This is a fun recipe for "kid helpers" to participate in. 

1 1/4 cup nut butter of choice
(we used almond butter)
use only unsalted, unsweetened butter
1 cup semi sweet chocolate chips
1/4 cup honey
1/4 teaspoon salt
4 cups crisp rice cereal
1 tsp vanilla extract

 Melt the almond butter, chocolate chips, honey, and salt in a large saucepan.  It melts FAST, so keep stirring, and remove from heat when there are no chip chunks left. 
 Remove the pan from heat, and add the rice crisp cereal.  Stir to combine, and press into a parchment paper lined shallow pan.  NO GREASING REQUIRED, and easy to lift out later.
 Spread out your crisp bar dough evenly in the pan, and refrigerate for an hour or so.  This will totally be done in time for dessert!

 CARB COUNT = 344g total
I got 18 pieces = about 20g each
Diabetics, you gotta love the PROTEIN in these things!



This easy ice cream recipe is LOW LOW LOW carbs.  First get out your ice-cube trays.  Mix together some unflavored coconut milk, and vanilla cream liquid stevia. Only use a tiny bit of stevia, a little bit goes a long way!
You can use any flavor, depending on the type of mood you are in!
Pour the flavored milk into the ice-cube trays and place them in the freezer until completely frozen. 
Pop out your frozen milk and Vita-mix the cubes into a creamy ice cream. 
SUPER low in carbs, Super good to eat. 

Each scoop is only 4g of carbohydrates!  You gotta love an ice cream that my type 1 diabetic daughter can have for FREE, no insulin needed!
We use these gluten-free ice cream cones.
I also experimented with some other flavors. Watermelon ice-cream was super easy to make.  A few frozen cubes of flavored coconut milk, and about a cup of frozen watermelon chunks. Still pretty low in carbs, about 8g per scoop.  

Keep going with this and try adding frozen blueberries, strawberries, or pineapple.  The frozen coconut milk gives it the cream, and the fruit gives it the taste.

Tribute To My Mother

My mother Cynthia Willard Huntsberger passed away October 5th, 2011.  I am still stunned at the suddenness of it all.  I want to dedicate this post to her life and to the spirit of who she was. 
Happy Mother's Day Mom! 
She was a country girl.
 She loved the outdoors.

She loved to celebrate events in life!
 She loved her kids.
 She LOVED family!

 She was a grandmother (pictured here in 2002 with Spencer her first grandson)

 She loved to read to her grandkids!

She was fun!
 She was tough.
She loved technology.  She had one of the first digital cameras. 

She loved going out and exploring, shopping, sightseeing.
She was my mother.

She was her mother's daughter.

She was a youngest sister.

She was my dad's wife.
 I know where she is now, she is happy, healthy, and surrounded by love.
Mom, thank you for all the time you spent pouring into me.  I remember endless activities we did together: crafting, gardening, cake decorating, baking, computer projects, drawing, hiking, reading, and sewing.  You always encouraged me in my talents, and never tried to fit me into a round hole, because you knew I was a square peg.  Through your death on Earth you have taught me to have an eternal perspective.  I know one day we will run together in heaven over the most beautiful landscape, and we will not grow weary.
